tangy collard slaw
INGREDIENTS
One bunch of collards shredded.
2 carrots shredded
1 small red onion sliced very thin
Dressing
One Avocado
1⁄2 cup cilantro
1⁄4 cup avocado or grapeseed oil
1⁄2 lime juiced
1⁄2 teaspoon cumin
1 teaspoon hot sauce
salt/pepper
INSTRUCTIONS
Combine ingredients in a blender and blend until smooth.
Combine salad and dressing and garnish with toasted pumpkin seeds.
