tangy collard slaw

INGREDIENTS

  • One bunch of collards shredded.

  • 2 carrots shredded

  • 1 small red onion sliced very thin

  • Dressing

    • One Avocado

    • 1⁄2 cup cilantro

    • 1⁄4 cup avocado or grapeseed oil

    • 1⁄2 lime juiced

    • 1⁄2 teaspoon cumin

    • 1 teaspoon hot sauce

    • salt/pepper

INSTRUCTIONS

  1. Combine ingredients in a blender and blend until smooth.

  2. Combine salad and dressing and garnish with toasted pumpkin seeds.

  3. Enjoy!
