irish farmhouse soup
INGREDIENTS
1/2 cup pearl barley
7 cups vegetable broth or stock
3 Tablespoons cooking oil (avocado or grapeseed)
1 large onion
2 stalks of celery
2 large carrots
2 medium potatoes
4 small leeks
Fresh rosemary
Fresh Thyme
Fresh Parsley
INSTRUCTIONS
1. Chop all the vegetables and set aside.
2. In a medium saucepan heat 2 cups vegetable broth, ad barley and cook for 15 minutes until tender, set aside.
3. In a large soup pot, heat cooking oil and add all the vegetables. Saute the vegetables, stirring them to keep them from sticking.
4. Add 4 cups vegetable broth, cooked barley, fresh herbs minced.
5. Simmer for 30 minutes.
6. Top with fresh green onions and herbs. Enjoy!
