Roasted kohlrabi

Ingredients:

  • 3-4 Kohlrabi bulbs sliced into small chunks

  • 1 clove of garlic minced

  • 1 small yellow onion diced

  • 1 ½ teaspoon your favorite oil (Avocado/grapeseed)

  • 1 tablespoon your favorite vinegar (apple cider/white wine)

  • ¼ cup pumpkin seeds

  • salt /pepper

    Instructions

  • Preheat oven to 375

  • In a bowl add all the ingredients and toss to distribute the oil and vinegar

  • Roast for 40-50 minutes
