Roasted kohlrabi
Ingredients:
3-4 Kohlrabi bulbs sliced into small chunks
1 clove of garlic minced
1 small yellow onion diced
1 ½ teaspoon your favorite oil (Avocado/grapeseed)
1 tablespoon your favorite vinegar (apple cider/white wine)
¼ cup pumpkin seeds
salt /pepper
Instructions
Preheat oven to 375
In a bowl add all the ingredients and toss to distribute the oil and vinegar
Roast for 40-50 minutes
